Through comprehensive analyses of the human gut microbiota, we seek to unravel the impact of food choices on microbial diversity and function. Using state-of-the-art foodomics techniques, particularly nutritional metabolomics and metagenomics, we are exploring bioactive compounds in sustainable foods and identifying the critical links between dietary components and intestinal health. Our research focuses on the influence of sustainable food processing practices on nutrient bioavailability and microbial metabolism. By understanding the microbial ecology influenced by agricultural practices, we seek to foster a holistic approach to food systems that integrates health, sustainability, and public awareness for better nutrition.
